South African Valentine's Day

Starter
Bobotie cups
Ingredients
1 slice white bread
250 ml milk
15 ml oil
1 onion, finely chopped
500 g beef mince
15 ml curry powder
20 ml sugar
30 ml vinegar
30 ml chutney
125 ml seedless raisins
Custard
1 egg, beaten
60 ml cream
salt and black pepper
30 g butter, melted
Method (30 min)
Preheat the oven to 180 °C and grease a 12-hollow muffin pan.
Soak bread in 125 ml (½ c) milk. Heat the oil in a saucepan and fry the onion until soft. Add the mince and fry until well browned.
Stir in the curry powder. Squeeze the milk out of the bread and crumble the soggy bread into the mince.
Add the sugar, vinegar, chutney, raisins and 125 ml (½ c) water to the mince. Stir and allow it to simmer for 10 minutes or until the mince is cooked and the mixture is almost dry, but still moist.
Custard:
Whisk the egg, cream, remaining milk, salt, pepper and butter together until well combined. Spoon the mince filling into the muffin holes and cover with the custard. Allow to stand for 5 minutes and bake for 15 minutes or until the custard has set.
Main Course
Grilled Chicken Kota
Recipe for Grilled Chicken Kota with chips, bacon and cheese!
Ingredients
Quarter loaf SASKO Premium White bread
120g chicken breasts
1 tbsp chicken spice
120g frozen chips
130ml BBQ marinade
4 slices streaky bacon
½ onion sliced
2 slices cheese
15ml Achaar
Salt for seasoning
Oil for frying
Method
Cut the bread into a quarter loaf and remove a section of the inside.
Cut the chicken breasts into bite size pieces
Season the chicken breasts with chicken spice and place on a hot grill until cooked. Place the cooked chicken into the marinade
Pan fry the streaky bacon and onions until golden brown
Deep fry the chips until golden, season with salt
Place the chips and chicken, cheese, bacon and onions into the quarter loaf and drizzle with extra BBQ sauce and achaar.

Melkkos With Cinnamon Sugar
Melkkos is definitely a proudly South African heritage recipe. The combination of childhood nostalgia and creamy comfort food is reason enough to try your hand at making this traditional pudding that you won’t find on the shelves at any supermarket.

Ingredients
50g Sugar
5ml Ground Cinnamon
90g Cake Flour
2ml Salt
80ml Sunshine D’Lite 40% Fat Spread
50g Sugar
1.5L Milk
1 Cinnamon Stick
2ml Ground Nutmeg
5ml Sea Salt Flakes
Method
Cinnamon Sugar:
Mix the sugar and ground cinnamon together.
Melkkos:
Rub together the flour, salt and fat spread in between your fingertips until it is crumbly.
Add the sugar and mix through. Heat the milk, cinnamon stick and ground nutmeg in a large pan.
Bring to boil, then simmer, gradually adding spoonfuls of the crumble mixture, whisking continuously.
Cook, while still whisking, for 8 – 10 minutes.
Turn off the heat, remove and discard the cinnamon stick and allow to rest for 5 minutes before serving.
Serve a spoonful of melkkos in a bowl, topped with a sprinkling of cinnamon sugar. Top with another spoonful, ending with a layer of cinnamon sugar.
